Vegan chicken tenders + free Disney gift cards + great DSW shoe deals + sick toddler
This was the week leading up to the long holiday weekend. Long weekends are my favorite!
This week Elena was sick with runny nose, a lot of coughing, and some vomiting. No fever and although she felt sick she kept being a happy toddler. Each time she didn’t feel good (several times) she made the most cutest face of partly closing her eyes and sticking her lips like a duck and saying “me sick.” Poor thing. As of today (Sunday 09/01/18) she’s much better.
Monday:
I got home late from work and I cooked up a few vegan chicken tender for the first time! They tasted EXACTLY like real chicken tenders!! No joke. I don’t know how Gardein (the brand) does this!! So far I’ve tried their meat balls, orange chicken and now chicken tenders and they all have tasted like real meat but they are all VEGAN.
Chicken tenders took 18 minutes to cook in the oven. Great meal for Mondays since it’s my late night at work.
Esteban and I had left over chicken tenders for Tuesday’s lunch and they tasted great heated up in the microwave.

I wasn’t sure if Elena was going to like the vegan chicken, so I made her one of her favorite dinners.
Tuesday:
Tuesdays and Thursday I run on the treadmill. Elena always wants her turn running. I let her go up to 2 miles per hour and she loves it! I think she will be a runner just like her mommy 🙂 or at least I hope so. I would love to run a half marathon with her when she’s older.

FREE Disney gift cards!! I finally got approved for a Disney Rewards credit card. I had applied one other time many years ago when I started to become obsessed with traveling to Disney and I got denied. I tried one more time in hope to get $250 in gift cards and get rewarded with Disney for my purchases and I got approved my second time.
The $200 I got for spending over $500 within 3 months (I bought our airplane tickets for November to go to Disney).
The $50 I got for adding someone to my account (my husband) and for him using it at least once.
These will be going toward paying our Disney vacation.
While I showered at night before bed, I sat Elena in her feeding table and I gave her two cookies. When I came out of the shower, I see that she had the whole bag of cookies!
I asked her who got the cookies and she said “me.” I then saw that she put a chair next to the counter where the cookies were. She had obviously gotten on the chair to reach for them. Oh my!

Wednesday:
Each night we watch Netflix (currently watching REBELDE) during dinner and just hang out for the rest of the evening.
Wednesday we were craving for something sweet. We went out to our local panaderia (Mexican bakery). We bought Mexican bread, a cupcake for Elena, and 2 hot chocolates for us (my husband and I).
Who needs Starbucks when you have a panaderia, right?
Thursday:
My long weekend began! I’m off Thursday-Monday. This means I’m with Elena 24 hours each day which means lots of playground time and lots of playing in Elena’s play room.
It’s times like these that I wish that I had a second child so Elena had someone to play with.
On this particular day, she requested to have her snack at the playground.
Thursdays are for Elena and I. We went shoe shopping at DSW and scored great deals!
Elena’s shoes were about $7 after discounts and my shoes were $25 after discounts.
They were both on clearance and then I had a $10 coupon for each (adult shoes coupon and kids shoes coupon).
I will be going back because I now have two $5 coupons (one is a certificate).

Skechers for me ($25) and carter’s for Elena ($7).
I wanted to go to Target but it was late and we were hungry. I took Elena to Sonic drive-in. If you’re not familiar with Sonic, you park and order from your parking spot and they bring out the food to you. There was no need to take out Elena. I did take her out to wash her hands but I let her eat in the front of the car with me and she loved it. She loved sitting upfront with me in the car that she didn’t want to sit back in her seat when it came time to leaving.
Friday:
I woke up early (only slept 5 1/2 hours according to my Fitbit) to eat breakfast, work on our budget and get a treadmill run in before Elena woke up.
Like I said earlier, Elena was sick this week. She loves to take Motrin medicine. She asked for medicine all through out the day each day that she was sick, but I only gave her the recommended dose twice a day.
Another day at the playground.
I joined Elena for her afternoon nap because I needed more than just the 5 1/2 hours that I got.
Elena loves to help me clean the home and even “wash dishes.”
I also purged many things in our home including our socks, undergarments, and Elena’s clothes. It was a work out!
I’m trying to be more of a minimalist.
Sunday is fastpass day! That means I will be booking our Disney World fastpasses bright and early before my usual Sunday morning run.
